I happen to love mushrooms, whether they’re sauteed, roasted or grilled, I can’t get enough. One of my all time favorite ways to enjoy these veggies is by making fried mushrooms. That crispy outer coating and tender inside just can’t be beat, and this recipe is surprisingly easy to make.

How to clean mushrooms

The best way to clean mushrooms is to use a damp paper towel to gently rub each mushroom. You can also rinse your mushrooms in a colander, but be sure to rinse them briefly; do not soak them in water. Slice the very ends off the mushrooms off. You can tell what part of the mushroom to cut off because the end is often harder than the rest of the mushroom and may have a yellowish color. Once the ends are cut off, you’re ready to use your mushrooms.

How do you make fried mushrooms?

Start with whole mushrooms and coat them in flour. Then the mushrooms are ready for a dip in a batter made of flour, beer and seasonings. Once the mushrooms are dipped in batter they go straight into the hot oil. Cook just a few mushrooms at a time. After a few minutes the mushrooms will be golden brown and crispy. Remove them from the oil and let them drain. Sprinkle on a little parsley and they are ready to serve.

Tips for fried mushrooms

  • Choose the smallest mushrooms you can find for the best mushroom to batter ratio. If you happen to have larger mushrooms, you can cut the mushrooms in half.
  • I like to use white button mushrooms because they have a mild flavor that works well with the batter and any sauces you may want. In a pinch, you could also use smaller cremini mushrooms.
  • Fried mushrooms are best when served warm immediately after being cooked. However, they can be refrigerated and reheated. You can reheat them and crisp them up in a toaster oven or a conventional oven.
  • The mushrooms will float in the oil, so you’ll need to stir them occasionally to make sure they’re evenly cooked.
  • For some extra spice, mix some cayenne pepper into the batter.
  • When you fry the mushrooms, keep the batter close to the oil so that you can easily transfer the battered mushrooms into the oil.

WHAT BEER SHOULD I USE FOR BEER BATTER?

The beer should be a lighter colored beer. Use a lager if you want a mild flavored batter to let the mushrooms really shine. Use a lighter colored ale if you want a more complex tasting batter. I used a Belgian style wheat ale. The Belgian style wheat ale made for a delicious batter that was flavorful and golden when fried.

What to serve with beer battered mushrooms

There are a lot of sauces that go great with these mushrooms. Ranch dressing is a classic sauce. Barbecue sauce and ketchup are always great. For a more unique experience, try honey mustard sauce or warm marinara sauce.

Heat a large, heavy frying pan over medium-high heat and add 1 tablespoon of the olive oil. When the oil is hot (you can feel the heat when you hold your hand above the pan), add the mushrooms and cook, stirring or tossing in the pan, for a few minutes, until they begin to soften and sweat.

Deep-fry the mushrooms in batches – about a handful at a time - until they're golden brown. Spread them in an even layer on a parchment lined baking sheet. Roast until they are golden brown and crisp around the edges for about 20-25 minutes, tossing once halfway through. Once the mushrooms are removed from the oven, toss them with the chopped garlic, lemon zest and juice, capers, and parsley.

How long does it take to fry mushrooms? ›

Method. To make the pan-fried mushrooms, heat the butter in a frying pan over a medium heat. When the butter starts to bubble, add the mushrooms and cook for 4–5 minutes, until the mushrooms are dark golden brown around the edges. If the pan gets dry, add a little more butter.

Should you fry mushrooms on high or low heat? ›

"Medium-high heat is the way to go with mushrooms. You want their liquids to slowly evaporate while they caramelize," says Norton. High heat can burn mushrooms, while low heat will make them cook in their own liquid, she says. You also want to be mindful of the pan.

What is the healthiest way to fry mushrooms? ›

The best (read: healthiest) way to cook mushrooms, according to the research, isn't in a pan. Rather, you will reap the most health benefits from your white button, portabella, cremini, or shiitake mushrooms by grilling them—and microwaving them.

How do you know when mushrooms are done frying? ›

Heat oil in a large deep skillet over medium-high heat until a drop of batter will sizzle and float to the top. Working in small batches, dip mushrooms into batter and fry in hot oil until golden brown, 3 to 5 minutes. Remove with a slotted spoon and drain on paper towels.

What happens if you deep fry without breading? ›

Before deep-frying, food is usually coated in a batter (this forms an effective seal when it comes into contact with hot oil). Alternatively, dust ingredients with flour. If deep-frying without a batter, as in the case of hot chips, pat the food dry with paper towel, as excess moisture will make hot oil “spit”.

Why are my fried mushrooms soggy? ›

Make sure the pan is throughly heated and greased.

Cooking mushrooms in a pan that isn't properly heated will cause them to boil and steam in their own released moisture rather than brown. That's why Susan suggests preheating the skillet over a medium to medium-high heat for around 2 to 3 minutes beforehand.

How do you get the most flavor out of sauteed mushrooms? ›

Oil and butter: For the best and richest flavor, cook the mushrooms in a mixture of olive oil and butter. Mushrooms: A pound of sliced button mushrooms should comfortably serve about four people. Wine: A tablespoon of red cooking wine enhances the flavor of the sautéed mushrooms.

Should mushrooms be cooked fast or slow? ›

There are many tasty mushroom recipes and techniques for cooking mushrooms, but we think roasting them is one of the best; the high and dry heat can bring out all their savory, meaty, deeply complex flavors.

How do you fry mushrooms without them getting soggy? ›

Use a dry pan: Heat up a non-stick frying pan over medium-high heat without any oil or butter. Once the pan is hot, add the sliced mushrooms and stir occasionally. This will help release the moisture from the mushrooms and prevent them from becoming too watery.

Why should mushrooms be cooked in water before oil? ›

Sautéing them in oil first is a crucial mistake when cooking with mushrooms, as the oil will disappear, so you'll add more but then be left with soggy, oil-logged mushrooms. Cooking the mushrooms in water -- although counterintuitive and unconventional -- solves the problem of soggy mushrooms.

Should you salt mushrooms before frying? ›
